Un babà di quasi cinque chili, un gigante di bontà!
E’ così che voglio festeggiare il compleanno di DE GUSTIBUS ITINERA, con uno dei dolci che più amo e che appartengono alla tradizione di famiglia. E a me piacciono le tradizioni, mi piace perpetuarle.
Non a caso il babà è stato il soggetto di uno dei miei primi articoli, lo trovate qui, con un tutorial fotografico validissimo anche per questo nuovo babà.
Come lo vogliamo chiamare, babà o savarin? E questa disquisizione è stata trattata in un altro mio articolo, sulla storia del babà, e lo trovate qui. Insomma, io del babà non potrei assolutamente fare a meno!
Almost 5 kilos, a giant of goodness!
I want to celebrate in this way the birthday of DE GUSTIBUS ITINERA, with one of the cakes that I love very much, which belongs to the family tradition. And I like traditions, I like to perpetuate my customs.

Ed ora la ricetta del babà, molto simile alla mia precedente, la differenza sostanziale consiste nel fatto che per questo ho usato solo lievito madre, anzi due lieviti combinati, la pasta madre e il lievito liquido, in una percentuale molto bassa rispetto al resto degli ingredienti.
Per l’impasto babà
750 gr di farina di forza 350w
300 gr di burro
700 gr di uova intere
40 gr di tuorlo (due tuorli)
75 gr di zucchero
70 gr di pasta madre
70 gr di lievito liquido
10 gr di sale
Per la bagna
1.2 litri d’acqua
600 gr di zucchero
400 gr di rum
la buccia di un limone
cardamomo, cannella intera, bacca di vaniglia
Per la finitura
Crema pasticcera
Crema chantilly
Panna fresca
Gelatina di albicocche o neutra
Frutta a piacere
Now the recipe of the baba, very similar to my previous, the main difference is that I've used only sourdough, more exactly two combined sourdoughs, stiff sourdough (pasta madre) and liquid sourdough, in low percentage compared to the rest of the ingredients.
For the babà-dough
750 grams of white strong flour 350w
300 grams of butter
700 grams of whole eggs
40 grams of egg yolk (two yolks)
75 grams of sugar
70 grams of stiff sourdough
70 grams of liquid sourdough
10 grams of salt
For the soaker
1.2 liters of water
600 grams of sugar
400 grams of rum
zest of lemon
cardamom, cinnamon, vanilla bean
For the decoration
chantilly custard
fresh Cream
Apricot jelly or neutral jelly
Fruit as you prefer
Procedimento:
Mettete in planetaria la farina con la pasta madre dura ridotta in piccoli pezzi, quindi avviate la macchina a bassa velocità.
Aggiungete il lievito liquido e le uova un po’ per volta, tranne l’ultimo, alternando con lo zucchero versato in due volte.
Aggiungete i tuorli, lasciando eventualmente l’ultimo uovo intero se l’impasto dovesse risultare troppo molle. Non siate frettolosi nel versare gli ingredienti, anzi verificate che siano ben assorbiti prima di continuare. Se usate una farina molto proteica sicuramente anche l’ultimo uovo sarà assorbito.
Aumentate la velocità e incordate bene, fino ad ottenere l’effetto velo, come mostrato nel mio precedente articolo.
Alla fine aggiungete il burro morbido, sempre un po’ per volta, e il sale.
Fate puntare l’impasto per mezz’ora, quindi versatelo sulla spianatoia, piegatelo e arrotondatelo, anche con la tecnica dello slap&fold, fino ad ottenere una superficie liscia. Fatelo riposare ancora 10-15 minuti e ripetete l’operazione.
Una volta ottenuto un impasto perfettamente liscio e rotondo, fate un foro al centro con un dito e ponetelo delicatamente nell’apposito stampo del diametro di 33-36 cm. Se non volete un babà così grande, potete riempirne due più piccoli oppure gli appositi bicchierini. Riempiteli meno della metà, confezionando una pallina ben pirlata, nel caso dei piccoli babà a forma di cappello.
Coprite con un foglio di plastica e lasciate lievitare per 10-12 ore in forno con luce accesa, fino a superare il raddoppio. Considerate che in cottura il babà acquisterà ancora volume.
Per la forma grande infornate in forno preriscaldato a 180°, per 50 -55 minuti, nella parte bassa, per evitare che si scurisca la superficie superiore. Ovviamente per le forme piccole bisogna ridurre i tempi di cottura.
Verificate la giusta cottura della parte interna anche col metodo dello stecchino.
Intanto preparate lo sciroppo: portare ad ebollizione acqua, zucchero e aromi, spegnere, far intiepidire, poi aggiungere il rum.
Fate intiepidire il babà, poi versate una prima parte di sciroppo direttamente nella forma, poco a poco, facendolo assorbire perfettamente. Capovolgete il babà in una grande ciotola e continuate a bagnarlo dall’altra parte, fino a completo assorbimento del liquido.
Di tanto in tanto strizzate delicatamente e fate riassorbire, per favorire l’assorbimento di tutta la bagna.
Spennellate con gelatina e decorate a piacere con chantilly, panna, frutta fresca o amarene sciroppate.
PROCEDURE:
Place the flour in the kneading machine with the stiff sourdough cut into small pieces, then start up the machine at low speed.
Add the liquid sourdough and the eggs little by little, except for the last egg, alternating with the sugar poured into twice.
Add the egg yolks, leaving possibly the last whole egg if the dough becomes too soft. Don’t hurry in pouring the ingredients, be sure they are indeed well absorbed before continuing. If you use a very strong flour, surely also the last egg will be absorbed.
Increase the speed and work the dough well, until you get the veil, as shown in my previous article.
At the end, add the soft butter, always little by little, and salt.
Let the dough rest for half an hour, then pour it on a work surface, fold and round it, even with the technique of slap & fold, until you get a smooth surface. Let it rest for another 10-15 minutes and repeat.
Once you have a dough perfectly smooth and round, make a hole in the centre with your finger and place it gently into the mould, diameter 33-36 cm. If you don’t want the giant babà, you can fill two smaller moulds or the special glasses for the typical Neapolitan babà. Fill them less than half, crafting a ball well rounded, in the case of small babà hat-shaped.
Cover with a plastic wrap and let it rise for 10-12 hours in the oven with the light on (temperature 27°C), until it grows more than double. During the baking the volume increases again.
Bake the babà in a preheated oven at 180 °C for 50 -55 minutes, near the bottom, to prevent the top surface darken. Obviously for the small forms it’s necessary to reduce the cooking time.
Check the properly cooking of the inside even with the toothpick-method.
In the meantime, prepare the syrup: boil the water, with sugar, lemon zest and spices, turn off, let cool, then add the rum.
Let the babà cool, then pour the first part of syrup directly in the form, little by little, making it perfectly absorbed. Turn the babà in a large bowl and continue to wet the other side, until the liquid is completely absorbed.
Squeeze gently, to facilitate the absorption of all the syrup.
Brush with jelly and decorate as desired with custard, fresh cream and fresh fruit.

Per lievito liquido si intende un lievito madre idratato al 100%, quello che comunemente viene chiamato licoli.
